What a Trip!

Hola and Cheerio!
We are back from a magical amazing trip to England and San Sebastian.
We had a fantastic and eventful time with so many loved family members...cant wait for you to see the videos below and share these experiences with you. Miss you all, cant wait to talk to you on the phone soon!

We arrive in London for a few days, and then drop Sofi off at Oxford. Sofi spends 2 weeks in Oxford and has a ball!

With Sofi in Oxford for 2 weeks, Mimi and Jaime go to San Sebastian. Together with Tita Tatat, Tito Jose Maria, Jos, Nana, Coco, Sarah, Marty, Mike, Kristy and Mahar, we spend 6 glorious non-stop days with you-know-who.

Whenever we think of you, we think of all the yummy things that you like to cook ( like those cookies you made when you were here in Singapore!). It is really great that you have discovered your love of good food and cooking so young! 
The quote above is from Julia Child. You may have heard of her. Julia Child almost singlehandedly changed the way that people all over the world looked at food, prepared food and appreciated food after World War II.
 And to think... she didn't even learn to cook until she was 38 years old! 
So, imagine what YOU can discover, invent, create
... since you have a headstart on Julia!
This summer, we hope you do fun things like... get to bake lots.... read lots of good books.... and play with your friends every day!

Tita Mimi would like to share with you a really delish recipe  that you might want to experiment with..( psssst! mamady LOVES this!).

LEMON SQUARES
Preheat oven to 350 degrees
CRUST
1 cup  all purpose flour
1/2 cup of butter (1 stick), melted
1/4 cup powered sugar
Add sugar to butter, then flour.  Mix well.  Press evenly into 8" square pan.
 Bake 20 minutes, until golden brown 
FILLING
2 eggs
1 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons of lemon juice 
a little lemon zest
Beat all ingredients together, and pour into baked crust.  Return to oven and bake 20 minutes longer.  
Do not overbake. 
 Let cool, then dust with powdered sugar ( easier on a wire sieve) and cut into squares.

Sassy, that's a really touching song and music with lyrics so appropriate for the 6th of July....i couldn't stop crying!!!!!
Paco says he feels a bit frustrated today having had to return to jail after Lourdes but he says, as they say in Bilibid, patience is like "kun basá ka na, might as well use shampoo and soap" - i don't know how to say it in Ilongo.
He is so very excited. He'll know for sure around the 20th if the permiso is given. Then he looks forward to coming to Barcelona and Sitges
in September.

On another note, taking advantage of this letter, i have to tell you all that since arriving from NY my life has been totally hectic - only a couple of days ago did i realize that the family blog is inserted in my ipad (thanks so much James). I've been happily and proudly using the ipad most especially in my very very personal office seat (always multi tasking to extremes) - so in that way, yes, the Ipad has changed my life. Yet the many activities coming my way in torrencial speed, has not given me time to write to each of you as i would want to.

NY still keeps me in the high and most especially because i was amongst you all, my very beloved children. You made me feel the most wanted, the most loved, the most special tita no other can beat. You leave me with just so little more to ask from life, and that is for us to be able to spend more times together. Thank you so very much to each and everyone of you.
